Adventures in Fermenting

For a while now, my stomach and digestive system has not been doing so hot. After listening to a podcast with guest Dr. Will Bulsiewicz on Bialik Breakdown I immediately ordered his book Fiber Fueled and his cookbook Fiber Fueled Cookbook. I could go on and on about how much these books have helped me feel so much better, but I'll save that for another post.
Today I made some fermented foods which are amazing for your gut health. They provide good bacteria and probiotics that improve digestion, amongst other great benefits.
First I gathered and prepared all of the ingredients for each recipe. Then put them together one by one. My kitchen was a mess by the time I finished! Tip, have a scale handy. I used it with three of the four recipes to get my ingredient weights correct. I also made little info cards so that I know what to do with each ferment over the next few weeks.
Here are the following recipes I made today.
Garlic Infused Honey
This was the simplest out of all four. You peel some garlic, toss it in a jar and top it off with honey! I learned this one from Pro Home Cooks on Youtube.
Rosemary & Shallot Radishes
I am really excited to taste this! One of the amazing recipes out of the Fiber Fueled Cookbook. Just radishes, shallot, rosemary, peppercorns and salt.
White Daikon Kimchi
I had never tried daikon radish before today. This recipe, another from this Pro Home Cooks uses daikon radish instead of cabbage for the kimchi. Also included is a puree of pear, green onions. ginger and garlic. The recipe calls for Korean Red Pepper Flakes but said it can be left out to make a white kimchi. I left it out because spicy things are not agreeing with my digestive tract at the moment.
Beetroot, Pear & Ginger Kvass
Kvass is another fermented food that not only has beneficial probiotics but may also have antioxidant and anti-inflammatory properties that could potentially help to reduce the risk of certain chronic diseases. This one is also from the Fiber Fueled Cookbook. Beets, pears, dates, ginger and anise. Such an odd combination, I am looking forward to tasting it!
