There are so many recipes for granola out there. This one is fast and absolutely delicious. Plus, it is packed with healthy ingredients that your gut will love!
Rolled oats - per 1/2 cup - 8 grams of Fiber, 13 grams of Protein
Walnuts - per 1 ounce - 3 grams of Fiber, 5 grams of Protein
Hemp Seeds - per 1 tablespoon - 3 grams of Protein, 120mg of Potassium.
and
Peanut Butter -
I use PB2 Pure Peanut Powder mixed with water to make a paste because it is much healthier for me than straight up Peanut Butter. Here is a comparison
PB2 Pure Peanut Powder - 1.5 grams of Fat, 4 grams of Carbohydrates, 6 grams of Protein
Jiff Peanut Butter - 16 grams of Fat, 8 grams of Carbohydrates, 7 grams of Protein
So although the standard peanut butter has more protein, it is significantly higher in fat and doubled carbohydrates. So if you are trying to lose weight, go for the PB2 Pure Peanut Powder.
Now! The recipe!
Maple Nut Granola
1 3/4 Cups Rolled Oats
1/3 Cup Chopped Walnuts (or whatever nuts you like)
2 Tablespoons Hemp Seeds
1 Teaspoon Cinnamon
2 Tablespoons Avocado Oil
1/4 Cup Peanut Butter (or heaping 1/4 cup of Peanut Powder turned into a paste with water)
1/4 Cup 100% Pure Maple Syrup
1 Teaspoon Pure Vanilla Extract
Directions:
1. Preheat oven to 350 degrees F.
2. Line a baking sheet with parchment paper or substitute.
3. Mix the Oats, Walnuts, Hemp seeds, and Cinnamon together.
4. In a saucepan melt the Avocado oil and Peanut butter together, remove from the heat and
add the Maple syrup and Vanilla.
5. Mix the wet into the dry covering the dry completely.
6. Plop the granola mix onto the prepared baking sheet and flatten out, spreading it out
over the pan.
7. Bake for 12 minutes then press the granola down and put it back into the oven for another
7 or so minutes. Just watch it at this point and cook more as needed. You are looking for a
nice golden brown.
8. Allow to cool, (if you can stop yourself from eating it right away) and then break it up.
It is delicious on French toast, pancakes, yogurt with berries, with almond milk or just eaten it like a snack.
Enjoy!
